答：加上也 one 也可以，但以省略为简洁。句中的 of 表示范围，of all operas in China 的意思是“在中国所有的剧种中”。句子意思是：在中国所有剧种中，京剧最有影响力，也最有代表性，它不仅在中国而且在整个世界都广受欢迎。
顺便说一下，不要把本句中的representative of（of 表示范围）与用于固定搭配的 (be) representative of 相混淆，后者的意思是“（足以）代表”“是……的代表”“典型地反映”等。如：
His views are not representative of the majority of the population. 他的观点并不代表大多数人的意见。
This case is representative of the attitudes of the police. 这个事例典型地反映了警方的态度。

【答】不能。因为这里的the most influential and representative = the most influential and the most representative ，而of all operas in China是形容词最高级的比较范围,the most influential 和 representative 是并列表语，如果在representative 和 of 之间加一个one，则 representative 就是定语了。
(2) popularity 为什么不用复数？
【答】在 win popularity 和 lose popularity中，popularity 总是用单数形式。
